Souteed Shrimps with Longjing Tea Leaves

    Souteed Shrimps with Longjing Tea Leaves is  a famous traditional dish in Hangzhou, Zhejiang Province. It combines tea with shrimps. The shrimps are white, fresh and tender. The bud leaves are fragrant. The color is elegant. There is tea smell in the shrimps, and fresh shrimps in the tea. The taste is clear and appetizing. 

    On September 10, 2018, the dish was rated as one of the top ten classic dishes in Zhejiang Province.


    Story 

    Emperor Qianlong of the Qing Dynasty once made a private visit in disguise out of the Forbidden City. When he drank a cup of Longjing tea at a tea farmer's home in Hangzhou, he was deeply impressed by the fragrant tea, and took some tea leaves secretly and left there. Later, he came to eat in a restaurant in Hangzhou, asking the waiter to make tea water with it.

    Seeing part of the Emperor's robe carelessly exposed on Emperor Qianlong, the waiter hurriedly told the restaurant owner, who was cooking shrimps. Feeling so shocked by the news, the owner mistakenly threw the tea leaves handed by the waiter into the cooking pot. Unexpectedly, the shrimps cooked together with Longjing tea leaves was so elegant in color and unique in taste. The Emperor Qianlong got very satisfied with it. 

    In this way, the dish became a famous one in Hangzhou, which has been handed down till now.
