Braised Pork with Dried Vegetables

Shaoxing people best love dried vegetables. Local people use this as a seasoning on their dinner table, putting some when cooking soup or frying vegetables. However, the most famous dish using dried vegetables is the Braised Pork with Dried Vegetables. Steamed with streaky pork, and adding with Shaoxing Yellow Rice Wine, the pork is crisp and soft, and the dried vegetables are fragrant. The dried vegetables, after absorbing fat, taste fresh but not salty, which become the main ingredient of the dish.
It is said that Braised Pork with Dried Vegetables was first created by Xu Wenchang in the Ming Dynasty. Although Mr. Xu was proficient in poetry, prose, calligraphy and painting, he was down and out in his old age. At that time, a new butcher shop was opened at the entrance of Dacheng Lane in Shanyin City. Mr. Xu was asked to write a signboard for the shop. After the signboard was written, the shop owner paid him with a piece of pork. Mr. Xu Wenchang was so happy because he had not eaten meat for months. He hurried home to cook the pork. Unfortunately, he didn't have any money to buy salt and sauce. Then he remembered that there were some dried vegetables in the bedside vase. So he used dried vegetables to cook the pork. Because the dish tasted very good, it became popular among the people.
